The Community Garden is open to the public every Wednesday from 5:00-7:00 p.m.
Our Seasonal Harvest
The beauty of farming in Laredo, Texas is that the heat allows for year-round growing. Our warm climate allows for a wide variety of fruits and vegetables to grow with vibrancy and resilience. Our summer crop currently includes:
Beans
We are utilizing Colorado river beans donated by the Youth Garden Project of Moab, Utah! Colorado River beans are used to demo “The Three Sisters Method” and enrich the soil with nitrogen, cultivating healthier soil.
Corn
We were lucky enough to receive a drought-tolerant variety of Maize known as “Puebloan maize” that has passed down through several generations of Native Americans. They are a crucial part of our “Three Sisters Method.”
Cucumber
Here at the TAMIU Community Garden, we have an assortment of cucumber. Our variety includes striped Armenian cucumbers, lemon cucumbers, in addition to pickling cucumbers.
Herbs
We are in the midst of developing our ‘Herb Curb,” a dedicated plot along the Garden’s edge. Once completed, visitors will find herbs such as catnip, valerian, chamomile, and much more!
Gourds
Our gourds are probably the most prevalent crop within the Garden. They will be utilized as bird houses and as a cool canteen for water!
Peppers
The TAMIU Community Garden also cultivates several families of hot and sweet peppers. We’ve got the notoriously hot serrano and the culturally unique and rare chilaquile negro pepper that comes all the way from Oaxaca, México!
Root Veggies
The Garden summer harvest includes a variety of root veggies. Growing at the Garden, you’ll find Black Spanish radish, touchstone gold beets, and some delicious turnips for everyone to enjoy!
Tomatoes
If there is one thing enjoying the heat, it’s our tomatoes! Our prevalent nightshades are subjected to several bonsaiing techniques that make for easier harvesting and healthier plants.
Watermelons
We are proud to cultivate the ever-so-beautiful moon and stars watermelon that comes equipped with a juicy orange flesh -- while its exterior is adorned with beautiful yellow striations and spots. You can also find the finicky Quetzali watermelon which is small in size, but dense with its juicy and succulent flesh!
Zucchini
Our garden is dense with a drought tolerant variety of zucchini known as “Dunja.” These plants waste no time in obtaining a large size while also producing a seemingly never ending supply of squash!

Like all things in life, a gift of time or treasure can help things grow…and the Garden is no exception.
If you’d like to grow with us, we’d welcome you. Volunteers meet on site most Wednesdays from 5 – 7 p.m. and we’d love to visit with you by phone or email as well.
